Winter Kale Salad with Matcha Miso Dressing

This crunchy kale salad with red cabbage and Japanese-inspired matcha miso dressing is the perfect winter staple to bring to your Holiday gathering! Not only is it full of delicious flavour but it's loaded with antioxidants, chlorophyll, vitamin A and healthy ferments. This lovely dish comes together quickly and can be made in advance to save you time.

Have you heard of matcha green tea? Matcha comes in a powdered form, which makes it an extremely versatile superfood that can be used in a variety of ways. This special superfood is made from green tea leaves that have been carefully ground down into powdered form. Matcha naturally contains a large amount of antioxidants due to the entire green tea leaf being consumed. If you're not a huge tea-drinker, there's countless ways for you to still enjoy the health benefits of matcha - such as in this lovely matcha miso dressing! When experimenting in the Soar Organics test kitchen with what to include in this matcha-inspired dressing, miso was a no brainer. Miso is a traditional Japanese paste made from fermented soybeans, salt and koji. One of the most common and well-known miso dishes in Western society is miso soup. Not only is miso extremely tasty and rich in umami flavour, but it's also loaded with ferments beneficial for helping maintain healthy intestinal flora.

When looking for a miso paste, make sure to look for a high-quality and organic option with no unnecessary ingredients. A good quality miso paste should only include the basic necessities: organic rice, organic soy beans, sea salt and culture (koji).

*Top tip: Massage your kale leaves with a tiny bit of warm water and extra virgin olive oil to help loosen their texture.

Vegan-friendly, Dairy-free, Gluten-free (check your hemp hearts for cross-contamination and ingredients in your miso paste)

Recipes serves: 2-4 people

  Matcha miso dressing holiday layout

What you'll need:

For the Winter Kale Salad:

  • 1 small bunch of Organic Kale

  • 1/2 cup chopped Red Onion

  • 1/2 cup diced Red Cabbage

  • 1 cup Roasted Chickpeas (see note)

  • 1/4 cup Hemp Hearts 

Note: To roast your chickpeas simply preheat your oven to 400F/205C. Coat your chickpeas in minimal olive oil and spices of your choice. Roast on a baking sheet for 30 minutes or until crispy. 

For the Matcha Miso Dressing:

  • 2 tbs. high-quality Organic Miso Paste (we opted for white miso)

  • 3 tsp. Water

  • 1 tsp. Soar Organics Matcha

  • 2 tbs. Fresh Lemon Juice

  • 1 tbs. Extra Virgin Olive Oil

  • 2 tsp. Red Wine Vinegar

Winter Kale Salad with Matcha Miso Dressing

Steps:

  1. Prepare your salad ingredients, assemble and set aside.

  2. In a bowl whisk together your miso paste and water. Slowly add in your Soar Organics matcha powder. Whisk all three ingredients well.

  3. Next add your lemon juice, olive oil and red wine vinegar.  Whisk until a smooth consistency forms.

  4. Generously pour your dressing over your kale salad, mix in and enjoy!
